In the Beach, Lake Ontario is more than a backdrop; it is a quiet presence that shapes the rhythm of our days and, in many ways, the way we experience flavour.
There is a freshness here, in the air, in the breeze, in the pause that comes with watching the water that mirrors the character of cool-climate wines. It is not only that the lake influences the vineyards beyond the city, moderating temperatures and extending growing seasons, but that it also influences us, encouraging a slower, more attentive way of tasting. In this way, the connection between water and wine becomes not just agricultural, but deeply personal.

Merlot is a grape I have always been smitten with, one that consistently offers a rewarding experience, whether enjoyed on its own or thoughtfully paired with food. In Prince Edward County, the presence of Lake Ontario is both visible and quietly influential, tempering the climate and extending the growing season just enough to allow grapes to develop character while retaining freshness.
Huff Estates’ Merlot reflects this balance with soft red fruit, subtle earthiness, and a gentle structure that feels both approachable and composed. Over the years, I have had the pleasure of bringing many students to Huff Estates Winery, where the experience extends well beyond the glass. The property itself , with its welcoming inn, contemporary art gallery, and thoughtfully designed spaces offers a deeper connection to place. It is a reminder that wine is not only shaped by the land, but also by the environments we create around it, inviting us to slow down, stay a little longer, and truly take it in.

Some wines ask you to slow down before you even open the bottle. Riverview Cellars’ 2021 Barrel 81 is one of them, not only for what is in the glass, but for the journey it invites.
You need to go to the vineyard to find it. The drive itself becomes part of the experience, unfolding into a scenic route that leads you to a property set quietly alongside the Niagara River. The river’s moderating influence tempers seasonal extremes, helping to extend the growing season and allowing grapes to ripen with balance while retaining freshness, a quiet but important force in shaping the wine.
Barrel 81 is their premium red blend, composed of 60 per cent Merlot, 25 per cent Syrah, and 15 per cent Malbec. Aged for two years in a combination of American and French oak, it offers a delicate texture and thoughtful balance. In the glass, it reveals layers of black cherry and earthy truffle.
We have made a staycation visiting the winery with our Blantyre Avenue friends and spending an unhurried afternoon on the patio. Barrel 81 reflects that same sense of place, expressive and grounded. It is a wine that feels connected not only to the land, but to the moments it creates, reminding us that sometimes the most memorable bottles are the ones that require a little effort to discover.

Along Ontario’s southern shores, where water tempers both heat and extremes, Sauvignon Blanc finds a natural expression in freshness and clarity. I have visited Colio Estate Winery on multiple occasions, and each time the team has been welcoming, acting as true ambassadors for the Lake Erie North Shore region. This wine is also a bit of a discovery, an excellent value.
The Hopetown Sauvignon Blanc captures this lake-influenced style with ease, bright, crisp, and quietly expressive. Aromas of lime and papaya lift from the glass, followed by a clean, refreshing palate anchored by a firm, wet-stone minerality. Fermented and aged entirely in stainless steel, the wine retains its purity and vibrancy, allowing the fruit and acidity to remain front and centre.
With a moderate alcohol level and a touch of residual sugar that rounds the edges without distracting from its dry profile, this is a wine that feels both precise and approachable.
Serve this with simple, fresh dishes. Think grilled seafood, bright salads, or a casual picnic spread where the wine’s crisp acidity and gentle fruit can shine without distraction. It is, at its core, a reflection of environment, shaped by water, guided by restraint, and perfectly suited to the kind of easy, open-air moments that define life along the lake.

Visiting Pillitteri Estates Winery feels like taking a quiet stroll through Canadian wine history. There is a sense of continuity here, of generations shaped by the land and guided by what the lake is willing to give. Along Ontario’s southern shores, that influence is both generous and measured, encouraging ripeness while preserving the freshness that defines cool-climate wines.
This Gewürztraminer–Riesling fusion reflects that balance with a gentle confidence. Aromatic and expressive, it offers notes of lychee, rose, and citrus, layered with a subtle sweetness and lifted by bright acidity. It is a wine that feels both rooted and vibrant, a reflection of a family that has long dedicated itself to cultivating the land with care, and to understanding the quiet dialogue between vineyard and water.
Serve this alongside lightly spiced dishes such as grilled chicken with warm spices, coconut-based curries, or even a simple cheese board with soft cheeses and fresh fruit, where the wine’s aromatics and gentle sweetness can both complement and soften the flavours on the plate.
